Ingredients for this bonbons recipe (makes about 40 bonbons)
3 cups of Rice Bubbles - brand name or no name brand will not matter
1 cup of desiccated coconut
60 grams of butter, chopped
1 cup of white marshmallows
1/2 cup of white chocolate broken into pieces
Preparation instructions for rice bubble and coconut bonbons
Combine the Rice Bubbles and the 1/2 cup of coconut in a large bowl. Spread the remaining coconut on a plate.
Place the butter and marshmallows in a small saucepan over a low heat. Cook this mixture, stirring constantly, for 2 minutes or until melted and smooth. Pour over the Rice Bubble mixture. Stir all to combine. Allow to cool slightly. Stir in white chocolate pieces. Allow to cool for 5 minutes or until slightly firm.
Using damp hands, roll small spoonfuls of the bonbon mixture into balls. Roll, 1 at a time, in coconut. allow the bonbons to cool, then serve
